Writing with a quill like in a real Torah.
Making a 'Mantel' (the cover) for our Torahs for Simchat Torah.
On Simchat Torah, we celebrate the completion of the reading of the Torah. Every week in Shul/synagogue a portion-Parsha of the Torah is read. On Simchat Torah we have completed the Torah and we start again from Bereishit- the first Torah Portion).
We dance with the Torah.
Making Umbrella Cookies
We begin the prayer of 'Mashiv Haruach Umorid Hageshem'- we pray for rain so that the crops will grow nicely. (The reason we begin this prayer at this point of the year, is that, by now whomever lived a long ways travel from the holy temple, already had a chance to get back home after the high holidays, and the rain would not effect their journey.)
